Southwest Cooking

Every group that explored or inhabited the Great Southwest left their mark on the food of the region. These have now accumulated into a rich and varied cuisine, including the Native American corn, beans, and squash, Spanish-Mexican dishes, cowboy cooking, pioneer cooking, and modern-day fusions of them all.

When most people think of "southwest cooking", they automatically think of chilis. Although chilis are indeed an important ingredient in many of the region's dishes, there is much more to southwest cooking than chili.
